What are those orange fuzzy things in the middle of flowers that get on my clothes?

Those are Anthers. And you are exactly right! They do get on your clothes and they will STAIN your clothes!
If you are specifically speaking of bridal bouquets, then remove them carefully. Most florists remove them when designing [they ruin our clothes too!] but if the flower, specifically the LILY, is in bud form when it leaves the design room, then sometimes they open up after the flower leaves the hands of the florist.
The best thing to do first, is to blow off the powerdery [POLEN] dust. Then lightly brush it . Do not immediately wipe it off. Treat with a spot cleaner. Never put your clothes in the dryer until the stain is gone. Line dry it, putting the garment in the dryer will only set the stain. It may take several treatments before it comes out.
I personally remove them but do so reluctantly :( I like them because it is a natural part of the flower and adds to the beauty!
